Lettuce Wraps
These are my families new favorite!!! My girls LOVE tofu & tacos so I thought I would combine the two worlds and make tofu tacos :)

They are really light and flavourful. We like to keep it simple and just add few veggies, tofu and or chicken, homemade salsa, vermicelli noddles and a homemade peanut sauce to give them lots of falvour. They are great for the whole family.
Ingredients
1 head of Bibb or Boston lettuce
1 English cucumber
3/4 cup julienne cut - carrot
1/4 cup each red and yellow pepper, thinly sliced
1 cup homemade peanut sauce
1 package firm sprouted organic tofu
1 organic chicken breast
baby tomatoes
cilantro
3 limes
tamari sauce
siracha (or any hot sauce)
garlic
ginger
honey
rice wine vinegar
Salsa
1 cup diced fresh baby tomatoes
1/4 cup chopped cliantro
juice 1 lime
Peanut Sauce
1/4 cup smooth peanut butter
2 garlic cloves, minced
1 tbsp minced ginger
2 tbsp honey
juice of 1 lime
1 tsp siracha
1/4 cup tamari sauce
2 tbsp rice wine vinegar
Chicken & Tofu Marinade
juice of 1 lime
2 garlic cloves, minced
1/4 cup tamari sauce
1-2 tsp siracha
Food process or blend all ingredients for peanut sauce, add hot water or coconut milk to make it smoother
Add tofu to the skillet along with marinade and fry each side until lightly brown
Cook chicken on the bbq or bake in the oven
Boil the water according to the package
Break off each leaf and let the kids go wild and crazy buliding their own taco!
