THE ANYTIME BOWL
This dish is a favourite in our house. It’s quick, easy & healthy. Our girls like to eat all the tofu first and my hubby always lathers his in bibimbap sauce
Ingredients - Serves Two
1 avocado
2 carrots shredded
1 cup of red cabbage, chopped thinly
4 cups of roughly chopped kale
2 cups of bok choy
1 package of sprouted organic tofu
1 cup of quinoa
Chia & pumpkin seeds to garnish!
Marinade tofu with roasted sesame oil and tamari
Cook quinoa according to package
Chop and shred all your veggies keeping the carrots and cabbage raw
Sautee your greens in garlic and fresh lemon juice
Place marinated tofu in a skillet and fry for 10 minutes, flipping every few minutes
Once quinoa is cooked combine all ingredients into your bowl, top with fresh avocado and chia / pumpkin seeds, add a splash of extra tamari if desired.
